Recipe: Jerk Salmon, Garlic Mash Potatoes, Fried Plantains, and Sautéed Spinach
Prep time 20-30 minutes | Cook time (until flaky, preferably 25 minutes)
1. Make sure your clean your groceries. Place salmon in a large bowl or cutting board and rub with fresh lime/lemon then rinse with cold water.
2. Preheat oven to 350 degrees F
3. Combine cayenne pepper, garlic powder, onion powder, seasoning salt, chili powder and black pepper (1/4 teaspoon each) in a small bowl.
4. Sprinkle lightly over the flesh side of each salmon fillet.
5. Rub ¼ teaspoon of jerk seasoning on top of the salmon until evenly distributed.
6. Place salmon fillets in a baking pan and add scallions, onion, red & green bell peppers mix well to combine.
7. Bake salmon in the oven until flesh flakes easily with a fork.
Ingredients – most ingredients can be found at your local super market. I purchased my salmon at C-town fish market and seasonings at Shop Rite
• 4 (3 ounce) fillets salmon fillets, or more to taste
• Lime or lemon
• lemon juice (substitute roughly 2 caps full)
• ¼ garlic powder
• ¼ onion powder
• ¼ cayenne pepper
• ¼ chili powder
• ¼ seasoning salt
• ½ black pepper
• Onion
• Red and Green bell pepper
• Scallion
• Walkerswood Jerk Seasoning
• Yukon gold potatoes
• Spinach
